Never tried Quinoa? You are really missing out on such a versatile grain. Well, I say grain because that's kind of what it resembles once cooked, but quinoa is actually a seed. It's a great option for those who can't tolerate grains or are gluten freedue to an intolerance or other similar issues.

Most are used to the white quinoa, but you a can actually get a red variety too, or a tricoloured which is white, black/brown and red (my favourite), because it adds colour and texture to a dish which is really beautiful.

Quinoa should always be rinsed under cold water before cooking unless it states there is no need to on the packaging because otherwise, it can yield a slightly bitter taste.

Once cooked quinoa is light and fluffy and a distinctive curl like tail.

It's great served hot in soups or as a replacement for rice or any other whole grain and cold in salad-like dishes. You can cook it in some water or in a flavoursome broth or stock.

Quinoa is a good source or protein as well as having lots of other healthy vitamins, so if you are looking for something else to try and haven't tried quinoa, add some to your shopping basket next time you are grocery shopping and give it a try.

So planning Christmas dinner this year, I just knew there had to be a yummy stuffing to dish up on the table. Christmas just doesn't feel complete without it. But I wanted to come up with a recipe that didn't involve using any healthy extra's, that way those are free if I fancy a bit of cheese (a must on Christmas day).

I already have these yummy Bulgur Wheat Sage and Onion Stuffing Ballswhich is also featured in this delicious Bulgur Wheat Sausage Sage and Onion Stuffed Chicken, but wanted to come up with agluten-free recipe and quinoa seemed like the perfect option. That bag of tricoloured quinoa in my pantry was just begging to be used.

For the sausage part of this Sausage Sage Onion Quinoa Stuffing, you can keep it really low by using some extra lean pork mince if you prefer which is fat free, but I chose to use some low fat pork sausage.

I recommend using fresh sage if you can in this recipe, as you just won't get that same flavour from dried. Sage has a such a lovely flavour that is perfect for any stuffing recipe especially when serving with poultry like Chicken or Turkey.

Along with the sausage, apple, sage, and quinoa, no stuffing is complete without onion. Lovely and caramelized for that delicious onion flavour, when it becomes translucent in the pan I add a little splash of balsamic vinegar, not something you would see in a traditional stuffing recipe, but I love what it does to sauteed onions.

Last but not least is seasoning, just salt and black pepper is all that's needed. So really nothing too complicated ingredient wise in thisSausage Sage Onion Quinoa Stuffing.

I bake it all in one in an ovenproof dish, where it gets the lovely golden colour to the exterior while still moist in the centre. Drizzled with this Gravy it's perfect.

Gluten Free Sausage Sage Onion Quinoa Stuffing | Slimming Eats

This recipe is gluten free, dairy free, Slimming Eats and Weight Watchers friendly

Gluten Free - use a gluten free sausage or ground pork

Ingredients

  • 400g/14oz of low fat sausages (skinned removed) of choice or use extra lean ground pork
  • 105g/3.7oz of uncooked quinoa (I used tricoloured)
  • 1.5 cups/360ml of chicken stock.
  • 1 onion, quartered and sliced
  • ½ tbs of balsamic vinegar
  • 80g/2.8oz of apple, peeled and chopped
  • approx 1 tbs of fresh chopped sage
  • salt and black pepper to season
  • spray oil

Instructions

  1. Rinse quinoa under cold water.
  2. Add to a saucepan along with the stock. Bring to a boil and then simmer for approx 10-15 mins until liquid is almost absorbed.
  3. Turn off heat, add lid and leave for 10 mins, then fluff up with a fork.
  4. Preheat oven to 200c/400f (gas mark 6)
  5. Spray a frying pan with some spray oil, add the onion and fry for approx 5 mins until translucent
  6. Add the apple and the balsamic vinegar and heat until it reduces down and caramelizes the onion/apple
  7. Add to the quinoa, along with the sausages (or ground pork), sage and some salt and pepper and mix well to combine.
  8. Grease an ovenproof dish with some spray oil. Add the mix and compact down into the dish. Spray over the top with spray oil and bake in the oven for approx 30 mins until golden on top.
  9. Serve and enjoy!!
