  • 1/2 cup butter, unsalted
  • 1/2 pound of yellow onions, sliced
  • 6 garlic cloves
  • 1 bay leaf

  • 1/4 cup of tomato paste
  • 2 1/2 pounds of ripe tomatoes, cored and quartered
  • 1 cup of water
  • 4 cups of heavy cream (can substitute with half and half)
  • 2 to 4 tablespoons of additional butter
  • salt to taste
  • 1/2 teaspoon of white pepper
  • 1 pound of puff pastryor store-bought sheets
  • 1 egg, beaten with water (will be the egg wash)

  • melt the 1/2 cup of butter in a large stockpot, over a medium low heat
  • Add in the onions, garlic, thyme, bay leaf, and peppercorns; cover and cook for about 5 minutes
