These Hawaiian Bowls are the perfect healthy dinner, full of veggies, fruit and protein. If you are looking to switch up dinner, this is a recipe I highly recommend trying.
Our Hawaiian Chicken Rice Bowls are the perfect way to enjoy a healthy meal packed with delicious flavors the whole family will love!
They are simple to make, healthy, and tastes amazing. Now all I need is aPineapple Dole Whipand some sand, and it will really feel like Hawaii.
Ingredients needed to make Hawaiian Chicken Rice Bowls:

- Teriyaki marinade
- Coconut milk
- Chicken breasts
- Red Bell pepper
- Yellow bell pepper
- Orange bell pepper
- Zucchini
- Brown sugar
- Honey
- Fresh pineapple sliced into spears
- White rice or Brown Rice
How to make Hawaiian Chicken Rice Bowls:

- In a gallon bag, combine teriyaki marinade and coconut milk.
- Add the chicken breasts to the bag and marinade your chicken for 8-24 hours.
- Heat grill to medium heat – high heat.
- Saute the bell peppers and zucchini in a saucepan over medium-high heat until tender.
- Meanwhile, place chicken on grill and cook for 2-3 minutes on each side or until cooked through.
- For the pineapple glaze, combine brown sugar and honey in a small bowl until fully combined.
- Place the pineapple spears on the grill and brush them with the brown sugar and honey mixture.
- Rotate pineapple and continue to glaze with the mixture, and grill each side for about 2 minutes.
- Once the chicken and pineapple are done grilling, remove from the grill.
- Assemble bowls by filling each bowl with one cup of rice and top with vegetables, chicken, pineapple spears and drizzle on teriyaki sauce, as desired.
- Store leftovers in an airtight container in the fridge.

Ways to change up these Hawaiian Chicken Bowls:
- Use Coconut Rice or Cauliflower Rice
- Add Soy Sauce, Pineapple juice or lime juice to your marinade
- Add Red Onion and/or Green Onions
- Add some garlic powder or chili powder

Ingredients
- 5 cups teriyaki marinade
- 1 cup coconut milk
- 6 boneless skinless chicken breasts
- 1 red bell pepper
- 1 yellow bell pepper
- 1 orange bell pepper
- 2 zucchini
- ⅓ cup brown sugar
- ⅓ cup honey
- 1 fresh pineapple sliced into spears
- 6 cups white rice cooked
Instructions
In a gallon bag, combine teriyaki marinade and coconut milk.
Add the chicken breasts to the bag and marinade your chicken for 8-24 hours.

I'm confused. You say it marinates in the sweetest pineapple marinade, but there is only teriyaki sauce and coconut milk in the marinade?

I wondered that too! But then I saw that the pineapple marinade is the honey and brown sugar. Looks wonderful--if I can grill it right. :)

For this recipe, we use Teriyaki marinade purchased from the grocery store. We like Yoshida's and Veri Veri Teriyaki.
