One of our favorite local restaurants serves a grilled avocado stuffed with chorizo, queso and pico de gallo that is as drool-worthy as it sounds. I wanted to recreate the dish at home, in appetizer form, for when we’re watching the Big Game.

The recipe is really quick and simple, too, requiring just a few simple ingredients: wonton wrappers, Avocados from Mexico, chorizo sausage, shredded cheese and TABASCO® Sauce.

When it comes to recipes, I’ve found that simple is usually better — for the cook’s stress level and for flavor. I mean, look at TABASCO® Sauce. It’s made with three simple ingredients — tabasco peppers, a small amount of salt and high-quality vinegar — that are marinated for three years in wood barrels before the sauce is bottled. No wonder it tastes so good.

You can make the wonton cups ahead of time and fill then on game day. Just press the wonton wrappers into a muffin tin and bake until golden brown. If you’re making them ahead of time, store the wonton cups in an airtight container or plastic bag.

Prepare the filling by chopping chorizo and Avocados from Mexico and sauteeing in an iron skillet over medium heat. Sprinkle with cheese, then fill the wonton cups.

Ingredients

  • 16 wonton wrappers
  • 1 avocado diced
  • 4 ounces chorizo sausage diced
  • 1/4 cup shredded cheddar cheese
  • TABASCO® Sauce

Instructions

  • Preheat oven to 350 degrees.

  • Press wonton wrappers into muffin tins and bake for 5-10 minutes, until lightly golden and crispy. Set aside to cool

  • In an iron skillet over medium heat, saute chorizo sausage and avocado.

  • Remove from heat and sprinkle with cheddar cheese. Stir until cheese is combined and melted.
