I was looking for a recipe to pair up with this ah-mazing Slow Cooker Cheddar Meatloaf and came across these Creamy Crock Pot Mashed Potatoes. I have never actually made anything with red potatoes before and had no clue that Ruler would have them in stock, but lo and behold, I got the last bag and they weren’t nearly as expensive as I thought they’d be. They have won me over to try more and more red potato recipes. They were yuuuummy!
And there are a bunch of potatoes when you are done. Michael suggested I take these to our small group pitch-in sometime very soon…there are that many! (Although, “small” doesn’t really apply to our group…there are 12 adults and 14 kids!) These are perfect for anytime you are feeding a crowd…and I’m guessing you will get many requests for the recipe!

Creamy Crock Pot Mashed Potatoes
Cut potatoes into quarters (or eighths if the potato is larger) and place in a large pot with your garlic and bullion cubes.
Cover everything with water and bring to a boil.
Boil for around 15 minutes, until your potatoes are tender.
Drain your potatoes and place a large bowl (and I mean large!) and mash with a mixer if possible…there are a lot of potatoes! All these potatoes filled up the large bowl of my stand mixer…and may or may not have threw one or two quarters out of the bowl because it was so full!
Mix in your cream cheese and sour cream until well blended.
Place potato mixture in a lightly greased crock pot and cook on low for 2 hours.
Mix in your butter, salt and pepper right before you serve. Enjoy!

- 5 lbs redskin potatoes
- 1.5 Tablespoon garlic minced
- 4 chicken bullion cubes
- 1 cup sour cream
- 8 oz pkg cream cheese
- 1/2 cup butter softened and sliced
- salt and pepper to taste

Hi..just wondering if you peeled the potatoes first. The picture looks so scrumptious and I think I see bits of red skin from potatoes! Thanks..love your recipes

Sure can! The original recipe calls for red, but I am sure brown potatoes would be tasty too!
